Classic Editor and wp-admin
-
Is there a preference or option that I can set so that I don’t ever have to see the ‘new’ block editor or the ‘new’ wp-admin?

Hi there, I’m not sure I understand what you are asking.
If you want to write in the original WP Admin Classic Editor, you’ll need to access your dashboard at WP Admin yoursite.wordpress.com/wp-admin/ and then click on either the Post or Page dashboard, look for the “Add New” button at the top and click on the arrow to the right. You can then choose either Block or Classic.

Forum staff have already advised in other threads that the change to the Editor in MySite won’t be reverted. They also advised in other threads that eventually (no timeline given) the Classic Editor in WP Admin will be retired. So it’s still a good idea to try out the block editor.
I think too many folks get hung up on the word
block. The very first line in the block editor interface when you open it is “start writing” which is what we’ve always done. If you get stuck on a particular thing you want to do, ask. That’s what we’re here for.
