Color issues

I have been doing a bit of css editing but a few things I cannot figure out.
1) I changed my hover and link colors but the pages across the top hover white – why? And How do I change it?
2) The Titles on my sidebar are Brown and I want them Black
3) I want to be able to re-arrange the pages in my preferred order not alphabetical.
Any help would be great.

Thank you, that was all so helpful and worked like a charm.
But now I am trying to narrow the page slightly. I know I could widen the background but then it doesn’t show on all machines. If you look the text is flowing into the side. I looked up several suggestions but nothing seemed to change it.
