How do I change the colours on a page from the Barnsbury theme? I want to change the colours on the contact page, but do not see the option to do so.

You can only change the colors for the whole site from My Site>Design>Customize>Colors&Backgrounds.
To change things on just one page you’ll want to play with blocks and their settings:

You can also group a few blocks to change the colors on all of them with just one click:
