Hi, I am wondering what the main differences of .com and .org are? If I sign up to the business package now, and want to move to .org in the future, will I lose out because you pay for a year at a time?

https://en.support.wordpress.com/do-i-need-to-self-host/Also note that there is a learning curve involved regardless of where you host, but running the standalone WP software on 3rd party hosting does require significantly more technical chops than hosting here on WordPressdotcom.
I would also suggest starting with the free or Personal plan unless you really do need the additional features specific to the Business plan for your site:
1 Unlimited Storage (3GB is enough to last a very long time as long as you resize and optimize your images before uploading them)
2 Unlimited use of Premium themes (there are lots of beautiful free themes to choose from as well).
3 Advanced SEO (which allows you to add meta tags to your site’s header)
4 Google Analytics integration (this is the only plugin currently available outside the ones built into the WordPressdotcom platform, but WPcom stats combines with Google Console does a great job too.)https://wordpress.com/business/
WordPressdotcom does offer a 30-day refund window (48 hours for domains if you use the domain credit to purchase one) if you decide the upgrade Plan is not for you. See here about refunds: https://en.support.wordpress.com/refunds/
