Hello. I was wondering what would happen to all my content (video, text, etc) that I might upload to a premium site, which I then decide to not renew the following year? I presume, and correct me if wrong, that the blog would simply roll back to a free personal account, but what would happen to the rest of the content?

The content would remain exactly where it is. All that would change is the domain URLs would be removed if your did not choose to renew the domain mapping part of the upgrade bundle, as the site would revert to the underlying .wordpress.COM URL. Removing the domain mapping would mean that every time the domain URLs when clicked they will produce 404 page not found errors rather than directing to the content. They only ways to prevent that are to renew the domain mapping or to purchase a site upgrade.
