Coraline: Page template options, Image Previews

Hi, I have a site pretty far along with Coraline, but I have not published it.
When I make a page, I am only given 2 page templates to choose from. The theme boasts many templates with many column options. Why is that?When I click an image, it opens an interstitial with this text at the top:
Published 22Aug12 at 1024 × 818 in HOME and it is in a grey box.

Can I make it show full width? Or not full width, but on click full width instead of next image?How can I control what images are then shown with the previous/next arrows? It seems somewhat random.
Is there a way to do another kind of nav bar? I don’t like this:

It would be better if the nav folded up, only showing one section at a time.I need to get this so I can live with it or trash it and move on :( Any help you can provide would be appreciated.
