Creating a page to choose sub categories

I’m trying to create a theme which shows the main category topics on a page. When a category is chosen, the user is taken to a page which shows all of the sub-categories in the category they chose. When they choose a sub-category they are taken to a page showing all of the posts in that sub-category.
Does anyone know how to do this? The navigation aspect of this is really confusing me. How can I create a template page that is used when the user is viewing a sub-category. Do I just have some logic in a categories.php template that gets the current category and checks if it has a parent or not and change the content based on this result?
Any ideas would be really welcome. Many thanks in advance.The blog I need help with is: (visible only to logged in users)

Hi Tony, if you’re building your own theme it sounds like you’re running the WordPress software on your own host – is that the case?
