Creating categories and adding published posts to them

How do i create different categories and then add my (already) published posts to them to make my blog more organised?
The blog I need help with is: (visible only to logged in users)

I can’t find a ‘categorie’ in the editing menu or even when I’m creating a post. on the right (sidebar) there is only drop down menu’s for publish, page attributes and featured image. Does that mean I need to change my template? or do I need to go into the dashboard somewhere and do something? I can’t recall the name of the the template I am using.

I’ve tried everything suggested, but it occurs to me that I am adding and editing pages. maybe pages can not be put in categories? although the pages are all listed as un categorized.

Pages cannot be put in categories. Don’t make a page-based structure. It will kill your google rankings.
