Creating Categories & Uncategorized

I am creating a mess. I have created 4 categories, which looks easy enough. However, when I indicate which category the post should go, it appears in all 4 categories. Unfortunately, it looks like I created a mess as I tried to delete then add then delete (you get the idea).
Also, every post is marked uncategorized under each category so posts are showing up twice. ugh. There must be an easy answer. Please help! Thank you.The blog I need help with is: (visible only to logged in users)

It looks like you’ve created 4 category widgets rather than 4 categories. Have a look at the categories support page which should clear things up for you (and delete the extra three copies of your original widget).

Yes, you’re right, I created 4 category widgets rather than 4 categories. I’ve deleted all category widgets so I can begin from scratch (again).
The 4 categories I’m trying to create: A Dog’s Life, Places Near & Far, Recipes & Try This (all unrelated to one another).
As you suggested, I looked at the support page but I’m still confused. I understand the “sub categories” example shown but my 4 are completely unrelated. Other than using 4 separate category widgets, I’m not clear how this can be done. I think I’ll just skip this all together, not working as planned. I’ll try custom menu if my theme supports it. thanks for your help. -
Have you gone through http://learn.wordpress.com yet? It lays out the basics, including adding categories.
