Creating sections for different posts

Hello! I’m new to the blogging world and require some help :) I’ve noticed on some blogs that users have created different pages / sections to organise posts. For example, I sometimes post poetry and want to be able to create a section of the blog where all these posts can be found. Does anyone know how to do this? Many thanks.
The blog I need help with is: (visible only to logged in users)

Post all poetry posts in a “Poetry”-category. Other post in their own category. Then make manus or links to category pages. :)
When you have sorted all posts in ther different categories you also can use a widget and make a custom menu.
