Custom Menus – I don't get it

I’m using Coraline theme and would like to customise my site more using Custom Menus. I’ve read the support pages but I still don’t get it! If you add pages, can you then post to those Pages only? I think (!) from what I’ve read that you always post to home but these posts can also appear under a specific page – is that right? If so, how do you do this because I just don’t understand the category pages section of the support information.
Can anyone explain it more clearly or give me some tips if you’ve done it already? Thanks.

Sally, to break out of the support wording, a Category page isn’t really a page at all.
What happens is you allocate a post to a Category. When you add that Category to a custom menu and someone clicks on the Category, all the posts within that Category “appear” as if they are on a “page”. The posts also still appear in the normal manner on the posts page.
Actual Pages are an entirely different thing – they are an actual page, which can also be placed on a custom menu.
I make extensive use of all three: Custom Menus, Categories and Pages, so let me know if you still need help.
