Customer's email address attached to domain – what do I do with it?

Hi
I’m building a basic site for a customer. He has a domain (let’s call it my site.com) but he also has an email address (let’s call it (email visible only to moderators and staff)).
Now, I know I can map the temp WordPress.com site to his existing domain, but what happens to the email address? He wants to keep it and use it as he always has done.
What am I missing?

I still don’t understand what to do here.
My client has an email address (e.g. info AT domainname DOT com) but I’ve never used one before. I’ve always dealt with gmail accounts.
He wants me to “take over” the email address so it doesn’t get lost during the transfer. What is he on about?
