Customizing datetime format of post captions AND default category.

I’m a total newbie here, so please pardon my ignorance. :(
Two questions.– 1-
I’ve choosen the “Greyezed” theme for my blog.
My problem is about the post caption (is this the correct word? … however I mean THIS:
As I post more than one article per day, I need TIME (more than date) to be shown, for example like this: “Pubblicato: 24 ottobre 2014 alle 8:30”

Is it posible to choose a default category for my posts? (which I post mainly from the iPhone app, so if it’s possible, I’d need the default category to be working on the app too).

Please note that the time stamp appearing in the byline is dependent on the theme.

You can choose the default category for your blog under Settings > Writing in your dashboard. Next to “Default Post Category” use the drop down menu to select what category you want to use as the default.
Then, when you write or edit a post, you can choose a different category using the Categories module. You can see how that looks in the post editor here: Adding Categories via the Categories Module
In the mobile app you will be able to see the categories and just the touch the one you want.

About the “time and date” question, following the link you gave me I found the solution: adding time (“G:i”) at the DATE timestamp.
