DEFAULT charset (Business plan)

Our Website on wordpress.com (Business Plan): symondsproject.org
I have made a backup of this site using the All-in-One Migration plugin (https://wordpress.org/plugins/all-in-one-wp-migration/). When I restore the site into my Development WordPress all the tables are created with: DEFAULT CHARSET=latin1;. Because this is not UTF8 encoding, none of our Greek characters display.
The SQL dump file inside the backup indicates that what’s coming off your server is:
DEFAULT CHARSET=latin1;
What we want is:
DEFAULT CHARSET=utf8mb4;
Any way you might remedy this for all tables in symondsproject.org?

Thanks! I think something is wrong. I go to that link and the form there is what posts here, to the Forums. There is, however, a warning box:
“This site may be a copy of WordPress with a different hosting service. Here’s the best way to find help with that. If you’re not sure though, please share your question with a link, and we’ll point you in the right direction!”
Not really sure what this “may be a copy of WordPress with a different hosting service” thing means.

Hm, it seems all users of the site (including you) were disconnected some time back.
We’ll need the WordPress.com account listed as the owner of the site (not the one you’re currently logged in as) to contact us, and we’ll help them correct this.
