Default entries in contact us plugin fields and translator for visitors

  hi .. very impressed with WordPress.. Please can you help with our Contact page on elriconcommunity.wordpress.com web site. As you will see when a visitor goes to the page he will see the default entries in the fields . How can we get rid of these?

  And what is the easiest way the site can be translated into other languages by the visitor. How can I set this feature up if possible? i.e a Spanish visitor can view in Spanish , Russian in Russian, Polish in Polish
