  I would like to know how to delete a category?

  Go to yoursitename.wordpress.com/wp-admin/
  [filling in the name of your site]
  From the menu, click on Post and from the dropdown that appears click on Categories. This will present all of your categories with the opportunity to edit, delet or view for each one.

  or
  (2) editing categories on posts?
  or
  (3) editing dynamic category pages in a custom menu?

  (1) To edit categories go to Dashboard > Posts > Categories
