Deleting Categories by Mistake

On my opening page I have two buttons with the name Thailand and two with the name Travel. I’m not sure about deleting one of these as I just tried to do that with another one (London, England) but I lost both it and the two posts that were on it. It says that if a category is deleted, the posts revert to the Uncategorised cat., but I don’t have this ‘uncategorised listing. I may have deleted it at some time, thinking I wouldn’t need it.
Can I restore it myself, or should this be a process carried out by the backroom boys?The blog I need help with is: (visible only to logged in users)

a) The blog linked to your username is empty, and the one mentioned below your question has only one post, filed under “Uncategorized”. So apparently you’re talking about a different blog.
b) When you delete a category, the posts that had been filed under that category aren’t assigned to “Uncategorized”, they are assigned to the category you’ve set as your default post category in Settings > Writing (which may or may not be “Uncategorized”).

My apologies for not having the correct web address on my query, I am fairly new to WordPress and, unfortunately, still making mistakes.
Thank you for the advice and I have now corrected the web address and hope to have no more problems of this sort. I am about to tackle my original query and I’ll see what I can do there.
