Deleting user but not their content

We have several users who no longer require access to our blog and we would like to remove them. Can they be removed but their original posts kept on the blog without having to assign their posts to another user?
The blog I need help with is: (visible only to logged in users)

Thanks, but when I go to remove a user I am only given 2 options – delete user and all their posts or delete user and assign posts to another user. Where could I find the option to delete user but keep their posts without assigning posts to another user?
And yes we do have the problem also of wanting to delete the site owner but keeping their posts but are finding that is not possible as site administrators.

A site owner cannot be removed from a site. They can only remove themselves by transferring ownership of the site to another admin on the site:
