Despite reading endless posts on the subject…. Categories!

Despite reading endless posts and FAQ on the subject I still cannot work out at what stage and where one puts a post into a category. So far mine have all ended up in uncategorised.
Does one select a category ‘before’ or ‘after’ typing the post?
Does one assign a post to a category ‘before’ or ‘after’ publsihing it?
Does one create a category ‘before’ or ‘after’ the posts are published?And where on the ‘new post’ page does one find a button / link / box / instructions?
And what can I now do with the uncategorised posts?

It doesn’t matter if you select the category before typing or after. You can publish a post without categorizing it, and then go back and Edit it and add the category, but you can also just add the category when you write the post. It doesn’t make any difference.
Creating a category won’t work unless you assign that category to a post. After all, what’s the point of having categories with no posts in them?
The Categories are in the right-hand side of the New Post page, in the sidebar below the Publish button.

Now my dear raincoaster, that was most helpful… all my posts… yeah, all four of them… are now assigned.
But how do I get the categories to show on the sidebar? Or have I perchance chosen a theme where this is not possible? If that is the case, which theme should I choose? I really would like one of the ones where I can put up my own picture.

Categories will automatically be shown in your sidebar once you go to Appearance>Widgets and add the Categories widget.* Don’t forget to click Save Change afterwards.
Important note so that you won’t be unnecessarily alarmed: When you haven’t added any widgets yourself, the theme displays its own default sample set of artificial sidebar items. When you add a widget, you’re taking over – the default set goes. So if you need any of the original items, just add the relevant widget.
(* Except in very few themes that don’t use widgets. Yours isn’t one of them.)

Thank you so very much, panaghiotisadam, that all worked, and in the process I found where I could change the photo on my header.
How great it must be to know how all these things work. But then, I would guess that you do not remember WWII. :)
Now there is just one more question… the top of my blog says ‘Lifemagician’s blog’ and under that it says, ‘another WordPress.com blog’ (or words to that effect).
How can I change this subheading to one of my own?

Thanks ella….. found it.
Lots of little menus there, but unfortunately I do not even understand the lingo in most of them. Any simplification of all of it anywhere?
