Difference between widget category and category alone

Hi,
I need help, I am writing my post but I don’t know how to file it under the category i created in widget. When I ho to post there is a category there. I dont want to use that. I want to use the one i created in widget.
Im using a travel journal theme.
I’m very new in blogging and just figuring things out by reading.The blog I need help with is: (visible only to logged in users)

Hi there. I see you have several category widgets with different titles.
You can’t use a different widget for each category: The category widget automatically includes ALL categories you’ve created, so you only insert the widget once. As you create new categories via the post editor they will automatically appear on that widget. If you add multiple widgets all of them will show all the categories, no matter what you name them.
Also note that a category will only appear in the widget once you have written a post in that category.
http://en.support.wordpress.com/widgets/categories-widget/Remove all the category widgets but one and give the remaining one a generic title. Then create new categories as needed as you add new posts to your blog. The new categories will appear in the widget and if you click on one it will take you to the archive showing all posts in that category.
