Display Posts Short Code – display more than 100

I have a food blog where I categorize recipes and as I am approaching nearly two years of daily posts many of my categories have over 100 items. I have set up pages for people to see recipe by different categories and I use the display posts short code to put them there. Unfortunately, in order to show all, I have to have a “Lunch”, “Lunch 2” and “Lunch 3” categories and then have the page have three display posts short code statements to get them all.
It would be nice to exceed the limit of 100 or to have a command that says to display the first 100, the next hundred or some other way.

I believe there is logic to this. Google search spiders stop indexing when they reach between 100 – 113 links on any page because they suspect it’s a link farm they then report it to Google.
