Do my email followers "count" in my number of views when they read my posts?

I have a pretty large group of people who clicked the “follow” button on my blog and get an email every time I post. I’m told by some of them that they read my post in their email without actually going to my blog. Does that mean that they don’t “count” in the number of views and visitors? If so, is there a way that I can change the settings so that their email message links to my blog?

Yes, these readers would not count in your view/visitor stats because they are technically not viewing your site.
If so, is there a way that I can change the settings so that their email message links to my blog?
So what you can do is change the settings so that your email notifications only show a snippet/summary of your post. They would then have to click onto your site to finish it. You can do this by going to Settings > Reading in your Dashboard. Where it says: For each article in a feed, show, please set that Summary and make sure to click on Save Changes at the bottom of the page.
