we own domain names – why do we have to transfer it over to you – then we won’t own it anymore

You don’t have to – it’s more a personal preference type of thing, really.
Mapping allows you to keep the domain registered with your current domain registrar and direct it to your WordPress.com site: https://wordpress.com/support/domains/map-existing-domain/
A transfer would allow to manage both your site and domain from the same place: https://wordpress.com/support/move-domain/incoming-domain-transfer/
Additionally, you would still own the domain if you transferred it to WordPress.com – WordPress.com would be your domain registrar rather than the company you use to register them now, but you would retain ownership.
So, basically, are you an “all of your eggs in one basket” type of person, or “not all of your eggs in one basket”? :)
