I notice in exploring signing up that a .com.au domain can’t be purchased thru wordpress. Am I wrong? Should I go ahead and purchase the domain name available timbishop.com.au from (go daddy)? Before signing up for a premium theme? thanks.

You purchase it elsewhere first. Then we add the zone record and you purchase a domain mapping upgrade to map to an existing domain.
In order to map to a domain one must have an underlying .wordpress.com subdomain blog to map from and the domain name your desire must be available for purchase.
If you have registered a .wordpress.com blog you log in as Admin under the exact same username account that registered the blog and purchase a domain name by purchasing an annually renewable domain mapping upgrade for the blog.

Dashboard > Store > My Upgrades is where you do the primary blog set up knowing it can take between 24 – 72 hours for domain name propagation to take place throughout the internet. You can view the DNS changes here > http://www.whatsmydns.net/ What’s important during that stage is to be patient.

Can I start this process before choosing a theme? i.e.; purchase my .com.au domain name then purchase a .wordpress.com subdomain without yet deciding on a theme? Much thanks.

You need to read what I posted above again. You need a free hosted wordpress.com blog ie. a .wordpress.com blog to map FROM to the domain URL that your purchase.
Yes you can purchase a premium theme later on but once aging there has to be a .wordpress.com blog in existence to apply it to.
