Two questions:
1. I have a domain I would like to use with wordpress, but I cannot change the nameservers, although I can point an A-record or CNAME to wordpress.com. Will this be sufficient?
2. When a domain is purchased through wordpress.com, what options have I got to move that to a different registrar in future, and how do I do it?

Howdy, a CNAME is sufficient for mapping any subdomain to WordPress.com. We have more details on that in our support docs. There is not a way to map the root domain name with a CNAME or A record though.
If you buy a domain name here you can transfer it to any other registrar after the first 60 days. We have steps for how to do that here.
