e-mail forwarding changing the 'from' address

  I set up e-mail forwarding to go my OS X e-mail account but am trying to change the ‘from’ address without much success. There is a ‘From’ drop down menu in the e-mail server but it does not list the new forwarded address… What am I missing here?
  I read through the wordpress and apple forums (and the articles that were suggested on the support pages) and I haven’t been able to find any helpful information on this. I’m pretty lost and feel like its an obvious solution…. I’d really appreciate the help!
