At the very bottom of our site, we need to add in legalese ‘PEPSI and the Pepsi Globe are registered trademarks of PepsiCo, Inc.’ as we are setting up a quick site for a promotion. Need to edit or remove the current ‘Blog at WordPress.com. | The Blissful Blog Theme’ text and update with ours.

You failed to post the URL of the wordprress.COM hosted blog you refer to. Please do that now after reading what follows closely.
Sorry but the footer credit links cannot be removed from any sites, even VIP hosted sites, here at wordpress.COM. Removal of the top Admin bar and/or footer credit links is a Terms of Service violation that results in blog suspension and there is no upgrade that changes that.
Terms of Service:
11. Attribution. Automattic reserves the right to display attribution links such as ‘Blog at WordPress.com,’ theme author, and font attribution in your blog footer or toolbar. All WordPress.com bloggers are required to maintain the Admin Bar (the dark bar that appears at the top of WordPress.com sites when logged in) as well as credit links, even our VIP bloggers. Please do not hide or alter text or links for the footer credits or the toolbar.
