I would like guests invited to my site to be able to add themselves / type information into a table or list or form and have everyone who visits the site see it. I would prefer this not be Google Docs, and very easy for the users. Kind of like a potluck – I have a list of food items and I want people to be able to sign up for what they are bringing so that I and everyone else can see it on the website. Is this possible?

You can add a Form Block and then update manually a page with the info but I have the feeling you are looking for something more automated so that there is no need for you to moderate this, is that correct? If so, you will want to look for a plugin.
To be able to use plugins on WordPress.com, you would need at least plan Business:https://wordpress.com/support/business-plan/
