When an update/edit is made to a published post, what happens to the email subscribers? Do they still just have the version before the updates/edit? Or are they sent a new email?

Hi there,
Only one e-mail goes out for the initial publishing of the post which comes as an email notification.
In my knowledge I don’t believe anyone is notified when a comment is edited, even the staff had said that RSS notifications don’t go out when an old post is edited.
The best way to find out is to subscribe to your own site via e-mail then you will see exactly what your subscribers see.
