If I transfer my domain to WordPress right now, what happens to my email at that domain address? I have to transfer that separately?

On WordPress.com we do not offer email hosting so you’ll either want to keep it with your current registrar and update the MX records as explained here:
Or, you can cancel your current subscription and purchase GSuite account here, together with your WordPress.com plan:
In this case, however, it will be a new, independent account so, bear in mind that if you do not export your old messages or contacts, you’ll lose everything.
