Email not with Google & MX record confusion

I am in the process of moving a blog onto WordPress.com, I am almost finished cleaning things up so it will move without crashing. I need to decide what to do with the email. I see the Google Apps option and I have seen a few mentions of having the email on other sites (Godaddy was one that was mentioned).

My host and ISP are the same company and small. So one option I just thought would be to have my email with my existing ISP. I am assuming that this is possible, but what would I need to ask my ISP to do? How difficult would this be to do? Google seems to be a log onto the web which I am not real thrilled about, the upgrade to business class looks a bit more convenient but it is a bit over kill for my needs and if I have to pay someone for the email I would just as soon shop locally.

I have looked around and the more I looked the fuzzier things see to me. What impact would it have on the moved blog?

    I hope this makes sense.

    Thanks for any help.
