Email Setup

I’ve had a nightmare time setting up both response emails to subscriptions, and a mail contact form.
I set up a default new subscriber message through MailChimp, and it says that it’s ‘sending,’ but whenever I test an email trying to subscribe, nothing happens. I don’t know what else to try and set up through them and I have no way of telling when it works or not.
The email contact form is a whole new nightmare. I’ve tried WPForms and Contact Form 7, nothing happens when I test either after embedding it into the contact page. This notification is a permanent fixture on the top of my screen:

Please review your WP Mail SMTP settings in plugin admin area. Consider running an email test after fixing it.I’m ready to pay someone to figure all this crap out if they could actually make it work. I’ve followed SO many tutorials and nothing, nothing makes it work. I don’t understand why it’s this hard.
