WHEN MY BLOG IS SEN TO MY EMAIL SUBSCRIBERS THEY CAN READ THE WHOLE BLOG WITHIN THE BODY OF THEIR EMAIL – CAN I CREATE A SETTING THAT POSTS ONLY PART OF THE EMAIL SO THE READER HAS TO CLICK THROUGH TO THE BLOG (AS MY STATS DON’T SHOW THESE PEOPLE AS VIEWS, OR DO THEY?)

Hello,
You are correct: If a subscriber reads your entire blog post in their email, but doesn’t click to visit your site, that doesn’t count in your stats. If that’s important to you, you can adjust your settings so only summaries are sent to your followers.
You can do that by clicking Settings → Reading in your site’s Dashboard, or simply click here:

Where you see, “For each article in a feed, show,” you will change your setting to “Summary.” Then, scroll to the bottom of the page and click the button to save your changes.
