My subscribers are receiving the full blog post. I only want them to see a preview on the email. How do I change that?

If you’re using Jetpack for subscriptions on your site, you can control this from your site settings. Go to Settings ->Reading in WP-Admin, and change the site feed settings from Full Site to Excerpt only. That will cause both the site’s RSS feed and new post notifications from Jetpack to only show an excerpt.
You can also control this on a per-post basis by using the more-block in your posts:
The same as above applies to WordPress.com sites like what you have in your account, except on your sites you’ll find the feed setting under My Site ->Manage ->Settings ->Writing
