Excluding categories

Is there any way to exclude categories from the main blog without using a plugin? I want to use my main blog for news and updates, and then allow users to click on categories to see posts in those sections if they so choose, instead of having it all jumbled together. I know wordpress.com doesn’t accept plugins, so I’m hoping there’s some other solution.

I don’t understand what you mean by all jumbles together. If you place the Categories widget in your sidebar your readers can choose to browse and read by selecting the Category or categories they are interested in http://en.support.wordpress.com/widgets/categories-widget/
If you choose to have the INove theme then you can use the option to display Categories along the top horizontal menu, rather than displaying static Pages on those tabs. That theme has other customizable options that can be used to make your blog’s appearance resemble a website.
