  what do the extensions really mean – i know .net means global but i’m not sure about all the others??

  This is known as the top level, part of the domain, or commonly the domain suffix: https://en.wikipedia.org/wiki/List_of_Internet_top-level_domains

  There is no hard of fast rule as to which to pick… it comes down to what’s available and what you prefer.
