Hello!
To change the default font color to white (#ffffff in Hex code), you can copy and paste this code into the CSS Editor under Customize:
body { color: #ffffff; }If you find pure white to be to harsh, you can find alternative gray colors at this page (scroll down to get lighter options) and replace #ffffff with the corresponding Hex color code:

Can you clarify what you mean by this? I’ll be better able to help once I get that information.
Thanks!

Thanks for the pointer.
What is the css code to change the headfing font colour on each page? Now I know the hex code wepage.
My other question was regarding that i would like to have a link to a webpage that isnt my blog, but i want it to open in a new browser rather than be redirected from my blog?

You can change the majority of your header colors under Customize -> Colors. Click the color circle indicated by the top arrow, and to insert your own hex code, click the link indicated by the bottom arrow in this screenshot:
The only header color you can’t change under Customize is your “So Dishy” header. To change this, you can add this to your CSS:
.site-title a { color: #00ff00; }The example color I used is a bright green, so feel free to replace that with the color of your choice.
For opening a link in a new window, you would need to append your hyperlink code with the Target attribute. Here’s a tutorial that will walk you through adding “target=_blank” to your links (using the Text editor on WordPress.com):

I tried opening a link in a new window as per instructions many times and cant get it to work. Is there a common error people make here?
Also, I would like to have my email on front page that opens an email when clicked on. Is that possible?
Also I want to remove the “portfolio’ menu at the top under teh header. but cant find out how?
Your assistance is appreciated.

Did you follow the instructions listed here and checked the “open link in a new window/tab” option?
http://en.support.wordpress.com/links/If you want to add this functionality manually, this page will go over how to properly set up a Target attribute (which instructs the browser to open a link in a new tab/window) to a hyperlink:
http://www.w3schools.com/html/html_links.aspPlease note, to follow the manual instructions you will need to set these links up on your posts using the Text Editor not the Visual Editor.
To remove the “portfolio” menu item, you need to set up a custom menu and select to remove that page from navigation:
http://en.support.wordpress.com/menus/To create a “mailto” link, you can follow the instructions shown here and add that link to a Text widget in your sidebar or to your custom menu:
