When my potential clients fill out the client intake form, sometimes it comes through to my email in the same thread even when the forms are from different people. This makes them easy to miss. Why is this happening, and is there a way to prevent it?

If you are using Gmail, sometimes Gmail threads emails it thinks are similar. Especially if it’s the same subject line.
In your case I can see how that would be frustrating because you could unintentionally miss a form submission.
I did find Google’s support guide for how to adjust the “conversation” settings in your email account: https://support.google.com/mail/answer/5900 – if you tell your email not to group emails into a conversation, you should then see every forum submission as a unique email.
I’m happy to hear the form is working as it should and delivering those form submission to your inbox. My hope is a setting change on your email account gets this working how you’d like.
