Gallery question

  I have a gallery on one of my blogs but not on the other. I was wanting to add one to the second one but is it possible to add one after you have been posting pictures? Would that mess with the pictures that are already in the post on the blog?
  Can you separate galleries into categories or does it have to be one gallery per blog?
