Getting categories to behave

I am not sure how to handle adding and using categories via the dashboard heading under Posts for Categories compared with using the Widgets option. I want (for instance) to have a Festivals category, and to have individual festivals (MIJF, Fringe, Stonnington) showing up under that parent category in the sidebar (I’m using Cutline theme by Chris Pearson).
One problem is that all my categories and sub-categories are showing up under all the sidebar categories. Can ayone help with that? In the Categories listing in the Dashboard under Posts, it clearly has my posts correctly attached to only one category. Yet my Press Plus category, for instance, (meant to be a parent and created using Widgets) is showing up as a sub-category of Festivals.
My second problem is that the only way to have my MIJF 2009 category appear one level down in the hierarchy of festivals seems to be to create another Festivals category using Categories under Posts. If I go back to having only the Festivals category created using Widgets, I cannot set it as the parent category of MIJF 2009 — it is not an option.
It seems terribly complex. All I want is to have a few categories showing in the sidebar, and the relevant sub-categories showing up only under their category heading and not all over the place as they are appearing.
Can anyone help? (I have searched the archives, but no one seems to have the same problem)

The Categories widget is not meant for one category: it’s your complete list of categories. As you’ve found out, it will display all the categories and subcategories that have posts assigned to them. So there’s no point in adding it more than once (and it’s a mistake that we’re allowed to do that). You assign each post to the appropriate category and subcategory, and title the widget “Categories”, “Subjects”, or whatever you see fit.

Apologies for that mistake. I am thinking through the implications of what you said, but I think that must solve both of my problems. I’ll delete my other widgets, though it’s a pity because the headings for my “parent” categories were looking good in bold and with the larger type.

You’re welcome.
If you want them styled like that, you can remove the Categories widget altogether, and use a Text widget instead (with links to the category pages). Then you can have them any way you like: bold, larger, colored – you name it. But you’ll need a lot of html coding for that. If you’re interested I can work it out for you; but keep in mind that there’s a major drawback: each time you add a new category, you’ll have to update the thing manually. I don’t think it’s worth the trouble.

Sounds as if it’s not worth it just to make the categories look fancy, but thanks for the offer.
At the moment I’m trying to work out how to add some material from the past, as a sort of archive, without it appearing after the posts I’ve made recently. I’m sure the instructions are there somewhere.

You can publish the material as regular posts and backdate them (post editor > “Publish” module: click “Edit” to the right of the date, change date, click OK).
Or you can create an appropriately titled page instead, possibly with an intro as well. Note that you can split the content:
