Getting categories to show in Sidebar?

  I’ve noticed that some of my categories show up in the sidebar and others do not. I set up my categories to be hierarchical, so that, say it would appear something like this:

  <b>My Writing/<b>
  –Fiction
  –Short Stories (under 2000 words)
  –Short Stories (over 2000 words)
  –R/L Accounts
  –Ruminations

  <b>Music/<b>
  –Songs I like (uplifting)
  –Songs I like (for relaxation)
  –Artists I like

  These are not my exact categories — nor nearly all of them! This is just to give you an idea of what I want to see in the sidebar, not just the most recent posts.

  Any help with structuring and use of categories vs. tags would be extremely welcome!
