Good resource for using Block editor for starting with a “blank” site?

I’ve been trying to find a resource to essentially build a small site “from scratch” using no 3rd party editing plugins.
However, most tutorials/guides I’ve found for the Block Editor / Gutenberg seem to start in the middle – how to edit a post, or a page, for example, which is kind of like teaching someone to build a house by showing them how to install a dishwasher.
My goal is to create a blank page to start with, containing a simple header, hero, body, and footer. This structure would be used for each page in the site.Any suggestions appreciated.

But the whole point of WordPress.com is that the house is already built and the dishwasher is already installed for you. All you need to do is choose a theme that suits your plans…perhaps a basic no frills theme. You don’t need third party stuff as the latest themes give you a lot of ways to customise the look of a site.
Using the Site Editor, you can design everything on your site using blocks, from the header right down to the footer. This guide will show you around the editor. Access the Site Editor To visit the Site Editor, follow these steps: Start from your site’s dashboard. Locate Appearance on the left side. Click on Editor. Let me rephrase it, then:
I want to find out how to work from or create a blank slate and design as I go, rather than try to find a kit that has made design decisions on my behalf and may or may not work for what I have in mind.
Ironically, I was able to do this years ago. Web design is over 30 years old, but has seemed to regressed & stalled in many ways.
