Google Apps for Work, but I won't be the user

First website I’ve done in over 15 years, and things have changed. I purchased a premium WP account and a domain name for my mom, and have started setting up her non profit website – it’s all still new but she’s already traveling to Africa to support this cause. Here’s where I need help:
I’m just an admin for this – I do NOT need an email account right away attached to her domain name. I’m comfortable just putting my secondary gmail account somewhere on the site for “having technical troubles?” But since I registered the site, I currently have the option to create a Gapps account, which appears will be tied to my gmail account. How do I go about giving that Gapps account to my mother and her gmail account? Trying to avoid paying for additional users at this point.
I’ve thought of things like inviting one of my other gmails to be an admin and then editing the WP profile account to use her gmail account, and then have it register for Gapps…is it that simple? I don’t want to start down this path and find out I’ve wasted the Gapps account. So far I have done nothing with the free email nor created or logged into Google Apps for Work.
