Hi, when someone clicks ‘read more’ on my gratavar, will they see my email address up on the top right? I really don’t like that. Thanks.

Log out, clear your browser cache and cookies and without logging in again click view your gravatar profile page to prove this to yourself please. http://en.support.wordpress.com/browser-issues/
re: other autofilled data that can only be seen when you are logged in
1. There will be autofilled information in a contact form or a comment box but your information is visible to you when you are logged in and have not cleared your browser cache and cookies. No one else can see it. When someone makes a comment on your blog, unless they have cleared their cookies, WordPress.com will recognize them and complete the details for them. No one else will be able to view those details in comment boxes or in contact forms. The next person who comments will see blank fields. Commenters will not see each others details.
2. There’s an Edit link on pages and posts. It’s an Admin link that only you as Admin and any editors you have can see when you are logged in. It’s for your convenience and your visitors cannot see it. You cannot remove it as it’s coded into the theme templates and we cannot edit templates or themes.
