  I am interested in paying for the advanced bundle and guided transfer. Once this is done, is it pretty easy to create my own theme and use plug-ins on wordpress.org?

  Have you read what the guided transfer includes? It includes 2 weeks of hand holding support form Staff. After that you are on your own and if anything goes wrong you have to fix it yourself. http://en.support.wordpress.com/guided-transfer/

  Hold it! You aren’t clear about this at all. WordPress.com and WordPress.org are completely separate. If you are moving to self hosting WordPress.org then then know the upgrades in the bundle are applicable to WordPress.com blogs.
