I understand that Gutenberg is being activated for EVERYONE on June 1. Does that mean I HAVE to use it?

that means we will not maintain the Classic Editor anymore, focusing instead on the Block one.
You will still be able to use the Classic editor though, or the Classic Block within the Block Editor.Here is more information about this change:

I’m sorry. I will NOT use Gutenberg. I refuse! I almost lost my whole blog because of Gutenberg. You need to stop this asinine policy of forcing us to use Gutenberg. So, if you don’t mind, I’ll just stick with Dashboard. I’m sorry. I’m kind of Old School. Why don’t you just get rid of Gutenberg and stick with Classic?

Hi there, as staff-mckluskey said in her reply, you will still be able to use the Classic editor.
At the moment there are two versions of the editor in two different places:
MySites: Classic and Gutenberg
WPAdmin: Classic and GutenbergIf I can go by the screenshots in the WPcom blog announcement, you’ll still be able to use this version of the Classic Editor

We still have options for you as mentioned here, no one is forcing you to use it.
We do recommend the new editor though, and we have some extensive documentation available at https://wordpress.com/support/wordpress-editor/
