I am wondering if I can delete the name of the theme I am using for my Premium Word Press Blog?

Hi there. You’re not allowed to remove that, no matter your upgrade. Doing so will get your blog suspended. See #11 or the Terms of Service: http://wordpress.com/tos/

Ok I’m really new to all this. So is there way not to use a theme and just build your own? Mine is pretty simple and straightforward with images and text.

No, you cannot use your own themes on WordPress.com, no matter your upgrade. The only themes we can use are the ones listed here: http://wordpress.com/themes/

I’d like to upgrade to WordPress.org and have already paid the $99 for Premium. In my cart it is showing WordPress Business for $100 off of $299 for $199. Since I’ve already paid the $99 towards the Premium shouldn’t I just be charged $100? in the cart it is showing $199…

WordPress.ORG is completely separate from WordPress.com. You cannot buy any upgrade here that will enable you to use WordPress.org.
If you want to use WordPress.org you need to cancel the Premium upgrade under Store ->My Upgrades and head to the WordPress.org website for further advice. http://en.support.wordpress.com/refunds/

$299 – $100 = $199. Do the math.
