Having a nightmare with domains-HELP!

I have been setting up my wordpress blog and have got myself in a muddle-help would be appreciated!
I set up a blog using gingerpickleblogs.wordpress.com and then mapped a domain to blog.gingerpickle.co.uk (I use the host TSOHOST for this)
I got muddled up by deleting things and just wanted to start all over again so I deleted the whole blog and wanted to start fresh.I started again, hoping to use the same domain but realised I couldn’t so now I am using-www.gingerpicklesblog.wordpress.com, hoping that I can just use the old blog.gingerpickle.co.uk that I mapped previously.
So when I go to My Upgrades and click on “enable auto renew” for blog.gingerpickle.co.uk it doesn’t work, it says “User or Token does not have access to specified site”. I then went to ‘Map a domain” and tried to do it again but it says it’s already mapped to a wordpress site.
I have some questions:
1. Is blog.gingerpickle.co.uk not available to use anymore as I deleted my blog that it was attached to?
2. Why can’t I get a refund for the mapped domain if I can’t use it? Ideally I would like to be able to use it as I don’t like the current domain.
What i’m trying to do is set up a wordpress.com website and then move it to a self hosted wordpress.org site so I can use a theme I bought which I stupidly thought could be used on wordpress.com but apparently it’s only for wordpress.org so I really don’t want to waste my money. I want to create a wordpress.org blog called blog.gingerpickle.co.uk that has a theme I bought, but I am so confused.

You are correct that once a blog is permanently deleted, its URL or address cannot be used again.
Now you want to re-map blog.gingerpickle.co.uk to gingerpicklesblog.wordpress.com, am I correct?

For a self-hosted WordPress setup, you don’t necessarily have to create a blog at WordPress.com. You can download WordPress software from WordPress.org and upload to your web host.
Custom themes not supported by WordPress.com can be installed on self-hosted blogs. You’ll have to find a web host and upload your blog there, to which you can then point the domain blog.gingerpickle.co.uk.
