Having trouble linking to posts via Categories

I’ve manage to work out how to create categories on my blog, e.g. “Movies”, “Documentary” etc.
However, having done that, and created sub-menus under those categories for the posts that I’ve written (i.e. a sub-category which has the title of the movie/documentary etc as its name), I can’t seem to create a link via that sub-category to the actual post where I review that title.
How do you do that?
I was using this page as a guide:
Specifically the bit under the heading:
“Menu Item Settings”
And I tried doing this bit here:
“Navigation Label – Enter your custom link text here. This overrides the default name of the menu item, replacing it with the name you give it instead.”
Obviously did something wrong…I entered the URL for the actual post of mine but under the sub-menu it comes up as a URL and not just the title of the post…and when you click on either the title or the URL it directs to a deal link saying there is nothing there.
How do I fix this?

Go to Appearance > Menus in your dashboard.
Click the arrow on the right next to the spot where you added the URL.
Find the “Navigation Label” field and change that to whatever you want the submenu item to say.
Note: if you don’t want to change the original category name, you don’t have to mess with that “Navigation Label” setting. Just add the category as the menu item, move it to the right spot, and save changes.

Thanks for replying. I’m short on time at the moment, so hopefully I can describe things coherently here!
When I set up the new system yesterday, I noticed that you could go to a Category on the Menu and I think if you clicked on a sub-menu item, you could go to the post I wanted to highlight. However, there would be a whole bunch of posts under that heading all clumped together. That’s what I’m trying to get rid of here…instead of getting every post under a category in the Menu, I just want to have one post come up…as my posts can be quite long and it would be off putting to have a huge scroll sidebar for an item, due to everything being included there.
Another issue for me is the navigation on this site…it all seems a bit of a pain…finding the forum, finding the links which explain how to do stuff, getting your blog looking like you want it to look.
Surely things can be simplified, right? I.e. something more intuitive/WYSIWYG?
It seems overly complicated at the moment.
When I have the time, I’ll try your advice about my blog’s appearance…attempting to do a little of that now.

I forgot to ask…I have no idea what “Title attribute” means/does, nor “Original” in that menu you mentioned before.
Would have liked to edit that into my post of a second ago but don’t see where/how you can do that.

Well, it depends on your end goal, but to answer your question: yes. Most people don’t add menu items individually for posts like you’re trying to add. Now that you’ve explained a bit more what you’re trying to do, I don’t think you really meant to add categories as menu links at all in fact because doing that will display the posts in clumps just like you said you didn’t want — that’s what category pages are meant to do.
At this point, it might be good to back up and explain some basics. In WordPress terms, a page is something static such as an About Me page or a Contact page and most people make those appear as menu links so they’re there all the time, whereas a post has a date associated with it and is usually displayed in a list of posts. You should take a minute to read through a couple related help pages that were written to try to better explain the differences:

In the context of a custom menu: “Original” is the original post or page or category title that you made when you created the post, page or category.
The “Title Attribute” is a way to add custom hover text. Hover text is a little bit of text that appears for a link when you hover over it. There’s no need to add that if you don’t want it.
