Hello,
When I upload my header image, the quality of the image is compromised. The text ‘Experience NL Be Captivated’ in particular is not as clear and crisp as the logo next to it.
I created the image by converting word to pdf then to jpeg, could this be causing the problem? Perhaps there is a way to upload the logo only and use CSS for the text?

This process definitely can cause resolution problems. In order to create an image, you should use a photo or graphic editing software. If you don’t have one on your computer, you can use a free, online one like this:

Incidentally, I’m not seeing any resolution issues when I look at your site:
https://cloudup.com/cLJAjLGOb8uIf you’re seeing something different, can you send me a screenshot? You can simply upload the screenshot to your Media Library, like any other image, and I’ll be able to access it from there.

Very important: your theme, Ideation and Intent, suggests a header size of 1124 x 200px. Using these dimensions will display your header in the best way possible.
This is your best bet. The CSS fix won’t help with any image resolution.

Another question, is there a code for locking my menu bar and when I scroll down everything dissapears behind my menu bar?

Hey there!
There isn’t a setting that allows for this, but you may find that someone in the CSS forum can offer you some code that will lock the menu in place. It will take some involved coding work that an Css specialist will need to help with.
